Salmon, avo, feta and seeds

So this is one I made a long way back, but I distinctly remember the flavours going really well together.

It comes from Joe Wicks’ second edition of Lean in 15, and is low carb but high fat, so ideal for those light summer nights!

It’s perfect if you’re cooking for yourself as it’s super quick and requires minimal ingredients.

To start, pre heat the grill to max.

Drizzle olive oil over the skin of a salmon fillet and pop it under the grill this way up. Let that gorgeous skin crisp away for about six mins whilst you crack on with the rest.

Dry toast a handful of mixed seeds in a hot frying pan. Let them pop away for a couple of minutes then turn off and season with salt.

Mash up an avocado, along with a quarter of a finely chopped red onion, a splash of sesame oil, and a generous handful of chopped coriander. This combination tastes great with the tangy feta and creamy salmon.

Turn the salmon over and cook on the other side for a further four or so minutes, until cooked through.

Serve your salon with the guacamole type mash along with lots of crumbly feta, plenty of leafy greens, the toasted seeds and a squeeze of lime.
