I had a look in the cupboards tonight to see what I had left (it is the end of the month after all) and found a BBC food recipe that I changed a bit to suit what ingredients were available.
Preheat the oven to 180 degrees.
Place 6 chicken thighs (bones in skin on) in a single layer on a large roasting tin. Roughly chop a large onion (I love onion and am also crap at chopping so generally go for larger pieces) and add to the tray with the chicken.
Mix together 2 tablespoons of olive oil, maple syrup, grainy mustard, sherry vinegar, and cranberry sauce with the juice of an orange. Pour two thirds of this mixture over the chicken and onions and shove the tray in the oven for 35 minutes.
Chop another orange into thick slices, add to the tray with the remaining mixture and and put back in the oven for another 10-15 minutes until the chicken is nice and browned.
When it’s ready mix all the juices in the pan together to give a sticky sauce and serve with rice and some green beans. Enjoy!
