These are so easy but super effective as a dinner party canapé and are best made the night before so no last minute panicking!
All you need is some smoked salmon, a packet of thin crepe like pancakes (easily available and super cheap from any supermarket) a tub of creme fraiche, some chives and a lemon.
Mix 3-4 tablespoons of creme fraiche with a handful of chopped chives and the juice of half a lemon.
Place a pancake at a time on a piece of tin foil. Spread this creme fraiche mixture in a thin layer over one side of a pancake (you can leave the end couple of centimetres as these will be discarded later). Then place a single layer of smoked salmon on top and roll the pancake like a Swiss roll so all the filing remains inside. Wrap the roll in the tin foil and place in the fridge overnight to set.
When you’re ready to serve remove the tin foil and slice the rolls into 2cm slices. Discard the uneven end bits and serve on a platter with some extra chopped chives and wedges of lemon and enjoy!
