Now I’m no baker. In fact, I can barely make a banana loaf without it looking sunken and sad. BUT, these are foolproof, tasty and good for you! What’s not to love?
Before you get going, preheat your oven to 160degrees.
In a big bowl, add 2 grated carrots, 2 peeled and grated apples, 100g of ground almonds. A generous helping of raisins, a big sprinkle of mixed spice, lots of ground cinnamon, a teaspoon of baking powder, about half a tub of ricotta and 3 eggs. My non measurable chuck it all in approach may be where I’ve been going wrong this whole time….🤔 Beat these ingredients with a wooden spoon until combined.
Divide this mixture between as many muffin cases as you like, I managed 12. Pop these into the oven for around 25 mins.
While these are cooling on a wire rack, whip up about half a tub of cream cheese, a squirt of honey and a dash of vanilla extract. Once the muffins are completely cool, dollop the icing on using a sandwich bag and a cut in the corner.
Either people are really polite or these were really delicious. Either way, I thought they tasted great and guilt free too! Enjoy C x
