As you can probably tell by now, WE LOVE FISH. This was really quick and easy to whip up after dinner and is super healthy as well. Perfect for the summer bikini body plan! This recipe serves 2 and is based on one found in Jamie Oliver’s magazine.
Find your largest saucepan and add a couple of tablespoons of olive oil over a medium heat for 2-3 minutes. Whilst the oil is warming up, slice 2 courgettes into cm thick discs and then place face down on the pan. Fry until golden brown and then flip and fry the other side. Keep warm in the oven.
In a separate bowl, mix 2 crushed garlic cloves, a thinly sliced red chilli and a tablespoon of white wine vinegar. Set aside.
Finally, fry 2 Mackerel fillets (I actually used smoked fillets as opposed to raw as that’s what we had in the fridge and they tasted delicious) over a high heat for 2-3 minutes each side with a splash of olive oil until golden and cooked through.
To serve, arrange some of the courgette slices on a plate and place the Mackeral on top. Finally, pour the onion, chilli mixture over the top of the fish, spreading evenly. Serve with some mint leaves and a slice of lemon.
