A much requested recipe from my pals is one of my dinner party classics! This can be made in advance so you don’t have to run around while your guests are here. It’s also so easy as you literally chuck everything in a pan and put it in the oven.
You will need a large deep ovenproof saucepan.
This recipe serves 4-5 people and is adapted from one in the Avoca cookbook (a great cookbook if you don’t already own it!).
Start by pre heating the oven to 180 degrees.
Finely chop an onion and gently sauté on a medium heat until nice and soft. Cut 4 chicken breasts into strips and add to the pan and brown lightly on all sides. Add the juice of half a lemon, a spoonful of soy sauce, ground ginger, tomato puree, a tablespoon of soft brown sugar, half a jar of plum jam, a teaspoon of dry mustard powder, a dash of Worcestershire sauce and a garlic clove. Mix all the ingredients around the onions and chicken so they are evenly spread.
Finally, quarter and stone 5-6 fresh plums and scatter over the pan.
Add the lid to the pan and put it in the oven for 45 minutes.
When you take the chicken out you will notice that the sauce is quite runny from the juice of the plums. I find adding a teaspoon or two of cornflour makes it a much nicer thicker consistency.
Serve with rice and tender stem broccoli and enjoy!
