Surf and Turf

If you’re like us and have been loving the amazing weather this weekend, I hope you’ll also enjoy this summer recipe.  Although this isn’t the standard lobster and steak surf and turf, but it’s a great easy (and much cheaper) alternative.  This is based on a recipe from Nigel Slater and serves 2.

Start by setting the oven to 180 degrees and putting 8 strips of streaky bacon into a roasting tray to cook.  Whilst they are crisping, boil a handful of baby potatoes in some salty water until you can pierce them easily with a knife. 

In the meantime, slice an onion into rings and fry in a mixture of 1 tablespoon of white wine vinegar, a desert spoon of olive oil and a teaspoon of Dijon mustard.  Cook these until they are golden and soft.  Finally, remove the skins and crumble a packet (2 or 3 fillets) of smoked Mackeral into the pan with the onions and gently heat.  When the Mackeral is nice and warm, slice the bacon and add to the pan along with the potatoes and toss so everything is coated in the dressing.

Finally, serve on a bed of plenty of rocket leaves and sprinkle with a handful of fresh dill.

Ready to be enjoyed in the sunshine (ideally with a large G&T in hand!)☀️☀️☀️
