Adapted from the Simply Cook range, this Malay Laksa is sure to get your tastebuds tingling. All you need is a few fresh ingredients and they send the flavours! You literally can’t go wrong with this and it’s super filling too.
So to get started, gently fry 200g of cubed butternut squash and sweet potato (you can buy the trays ready prepped if you’re lazy like me) in coconut oil for a couple of mins.
Next, add the laksa paste included in the box, along with 300g of boneless chicken thighs cut into chunks.
Whilst this simmers for a few minutes, make up 300ml of chicken stock which you’ll also find in your box.
Once served, whack this to the chicken pan along with a can of coconut milk for another six mins.
Finally, add in two nests of dried egg noodles, a bunch of chopped asparagus spears and the Thai Garnish and give it all a good stir. Let this bubble away for another three mins.
Serve in dishes along with a sprinkling of coriander, easy peasy and honestly one of the tastiest dishes. Enjoy C x
