Chicken and Olive Slow Cook Dream..

This is so easy and ideal for a dinner party as you can leave it to cook slowly whilst you mingle with your guests. This is a one pan recipe so super easy! You’ll need a good couple of hours, but most of this is for cooking time. Serves 4-5

One from Jamie Oliver Superfoods and amended slightly to suit our tastes.

Cut an onion, leek and 3 cloves of garlic and add to a large deep pan with a tablespoon of olive oil. Whilst that is frying over a medium heat, slice a packet of pancetta and add to the mix along with  a couple of sprigs of rosemary and 2 dried bay leaves.

Chop a handful of sweet potatoes with their skin on into bite size chunks (4-6 depending on their size) and half a packet of mushrooms- add both of these to the pan. While these simmer, peel the skin off 4 chicken thighs and add to the pan, giving everything a good stir to mix it up. Add a large glass of red wine and bring up to a high heat to reduce slightly and then mix in a tub of passata along with a tin of chopped tomatoes. Finally add a handful of olives. Make sure to season with plenty of salt and pepper, then stick it in the oven for a good 60-80 minutes until it is thick and bubbling.

 

With any luck your chicken will be melt in the mouth and you’ll have a large pot of delicious and nutritious comfort food 🐷
